- 1 tablespoon olive oil
- 1 onion, chopped

- 4 cups vegetable broth
- 1 teaspoon dried basil
- ½ teaspoon salt
- ¼ teaspoon black pepper

Pour in the crushed tomatoes, vegetable broth, dried basil, salt, and black pepper. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, stirring occasionally.
Step 3
Carefully use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a regular blender and blend until desired consistency is reached.
Step 4
Serve the soup hot, garnished with fresh basil leaves if desired.
Notes / Tips
- For a richer flavor, you can use fire-roasted diced tomatoes rather of crushed tomatoes
- Adjust the amount of basil and black pepper to your liking.
- Top with a dollop of Greek yogurt or a sprinkle of Parmesan cheese for an extra creamy touch.
